JJ Mannings, Pareidolia Brewing Co., and the Tiki Bar & Grill are among businesses with the lowest number of violations for January 2023 in Sebastian, Florida. 

Almost all the restaurants in Sebastian received violations for no proof of required state-approved employee training. Every employee must be trained on correct food handling and hygiene practices.

No Name Bar

The No Name Bar had 9 violations, none of which were high priority. Among them was no proof that food employees are informed about foodborne illnesses.

“No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided form to the owner to complete for all employees,” the state inspector wrote.

The other violations were about a handwashing sink used for purposes other than handwashing, a kitchen back door that had a noticeable gap, a missing drain plug at a dumpster, dirty storage shelves, and a storage area not maintained clean and organized.

“Outside storage area in disarray and old equipment observed,” the inspector wrote.

Taco Mobil

Taco Mobil had 6 violations, 1 of which was high priority for using nonfood-grade containers used for food storage. The other violations included a damaged wall in the restroom and no proof of required state-approved employee training.

Cafe in Paradise

Cafe in Parade received 10 violations, 1 of which was high-priority for storing pooled eggs over cooked potatoes in a walk-in cooler. All violations were corrected on-site.

The other violations included a gap in an exterior door, ice buildup in a reach-in freezer, a dirty floor fan, a handwashing sink used for other purposes, and no proof of required state-approved employee training.

Village Tavern

Village Tavern has 5 violations, 1 was high priority for storing eggs over brownies in the reach-in cooler. All violations were corrected on-site.

Some violations were for a dirty floor in the storeroom, a dirty shelf, and no proof of required state-approved employee training.

Tiki Bar & Grill

Tiki Bar & Grill had 4 violations, with 2 high-priority issues involving temperature control involving chicken wings in a walk-in cooler, and an employee touching food with their bare hands. 

“Food was not being heated as a sole ingredient to 145 degrees or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee handling buns for immediate service. Employee washed hands and put on gloves,” the state inspector wrote.

All violations were corrected on-site.

Ruby Tuesday

Ruby Tuesday had 11 violations, 3 were high-priority for storing raw beef over cheese and sliced onions in a reach-in cooler, missing vacuum breaker at a mop sink faucet, and sour cream stored at 48 degrees instead of the required 41 degrees. All violations were corrected on-site.

The other violations were for a dirty walk-in freezer door, floor tiles in disrepair at the cook line (repeat violation), hood filter soiled in grease (repeat violation), dirty shelves in freezer, and no proof of required state-approved employee training.

Ay Jalisco

Ay Jalisco received 12 violations, 2 of which were high priority for a dishwashing machine that was not sanitized properly and a sanitizing wiping cloth that exceeded the maximum concentration allowed. 

“Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 0 ppm chlorine and dishes being washed at glassware machine at bar. Employee changed to new sanitizer and retest at 100ppm,” the inspector wrote.

Some of the other violations were for greasy tiles at the cook line, hood filters at both cook stations soiled in grease, a tomato sauce can in lettuce container, and no proof of required state-approved employee training. All violations were corrected on-site.

Pareidolia Brewing Company

The Pareidolia Brewing Company only had 4 violations; none were high priority. All violations were corrected on-site. 

The other violations were basic and for missing paper towels at a handwash sink, and a missing label from a spray bottle with sanitizer.

Jersey Mike’s Subs

Jersey Mike’s Subs received 5 violations, with 1 for high priority for a ware washing not at proper minimum strength. All violations were corrected on-site. 

Some of the basic violations were for a dusty storage shelf, dust at the bottom of the display cooler, and no proof of required state-approved employee training.

JJ Manning’s

JJ Manning’s had 4 violations, with 1 high priority for storing chicken wings over beef brisket. All violations were corrected on-site. 

The other violations were for food debris on a sandwich press and no proof of required state-approved employee training.
